Moon Ritual Cakes

1 cup/128 grams shortening or 1/2 cup/113 grams shortening and 1/2 cup/113 grams of butter

1/3 cup/43 grams sugar

2/3 cup/86 grams ground blanched almonds

1 2/3/ 214 grams flour

1/4 teaspoon salt/1.25 ml salt

1 cup/128 grams confectioner’s sugar

1 teaspoon/5 ml cinnamon

Mix together shortening, sugar, and almonds. Soft together flour, salt, and then stir into almond mixture until a soft dough forms. Chill dough for at least one hour. Preheat oven to 325F/165C. Break off pieces of chilled dough and roll pencil thin. Cut rolled dough in 2 1/2/6.5 cm lengths and form each into a verdant shape with your fingers. Bake in an increased cookie sheet until set, but not brown, about 14-16 minutes. Mix together confectioners sugar and cinnamon. Cool cookies on pan, and while they are slightly warm dip each in cinnamon mixture. Makes approximately five dozen crescent Moons. For vegan guests, use a natural sugar substitute in place of refined sugar.

    1. I don’t know the recipe didn’t say. What I would do is take a small bit of the dough, like enough for 6 moon cakes, make it into a ball than freeze it. At the same time I would also take a couple more that are already formed into the cresant shape, set them next to each other on a plate let them freeze. After the are frozen place them in an airtight container laying flat so they don’t break. Leave the raw dough both ways in the freezer for a week, than defrost and bake them as the recipe says to. Or you could also bake the whole batch than lay them out in a cookie and place them in the freezer after they are frozen put them in a container so they lay flat and put wax paper between the layers. This way you has a fresh baked goodie to pop in the mirowave for a few seconds as a yummy treat fir yourself or to go with coffee or tea if someone stops by to visit.
      My dad’s mom always had about 2 to 4 different types of very simple homemade goodies frozen for gerself or company. When she got low on one of her usual stabdbys I would usually get to spend Friday night at her house and than in Saturday we would make whatever was low in her freezer with extras fir me to take home. The best part was all but one of them were no bake recipes so even at 3 years old I could do the stirring, only way I got to lick them spoon :0}
